Add together in a mixing bowl:
- 2 tbsp sugar
- 0.5-1 tbsp salt
- 1 tbsp yeast
- 2.5 cups warm water
Let stand for 5 minutes (1 minute if instant yeast).
Work in 6 cups of flour, one cup at a time. First two cups can be whisked. If not using a mixing machine, the last cup will probably have to be kneaded in.
Knead.
Put in greased bowl, cover and let rise at least an hour (should double in size).
Punch dough ball and form into loaves.
Put on/in baking pans.
Slash top diagonally.
Brush whipped egg white on top or mist with water.
Let rise 25-30 minutes.
Bake at 425°F for 10 minutes.
Turn oven down to 350°F, and bake for 20-25 minutes (until top is brown and bread sounds hollow when tapped, top and bottom).
